Named after the United Kingdom’s Queen Victoria, the Victorian period lasted throughout her reign from 1837 to 1901. Her reign was so long that Victorian style could be separated into groups such as Victorian classic, Eastlake, Gothic, cottage, Oriental, Renaissance, and rococo. The series thrust 4 professional bakers from different baking backgrounds into a baking time machine back to the Victorian era. The First episode was filmed at Sacrewell Farm near Peterbrough in a newly renovated early 1800’s rural bakery attached to a flour mill. Trusler writes so untrustingly of bakers and milk women that I feel sorry for them. To get a better glimpse into their sad lives, I moved up six decades and excerpted from the famous book London Labour and the London Poor: a cyclopaedia of the condition and earnings of those that will work, those that cannot work, and those that will not work, Volume 1, by Henry Mayhew, published in 1851.
Victorian Era Baking
In Georgian times the introduction of sieves made of Chinese silk helped to produce finer, whiter flour and white bread gradually became more widespread. Today more than 70% of the bread we eat is white. Tin from the flourishing mines in Cornwall began to be used to make baking tins. Bread baked in tins could be sliced and toasted – and it was not long before the sandwich was invented. In the early 19th century, life was dramatically changed by the Industrial Revolution. As large numbers of farmworkers moved from the country into cities to work in the new factories, less food was produced. When the Corn Laws were passed prohibiting the importation of grain, starvation became a serious problem.
